What Allagash is doing <I>is</I> unique. They are making lambic in the old style--allowing wild yeasts in the atmosphere to ferment their beer. This is a magnitude more radical than what Vinnie is doing, by letting his barrels, already wonderful hosts for his previously-pitched yeasts, do the work.
