The Spontaneous Files: De Garde Brewing

 Other posts in the series: Block 15 and Solera

This past summer, I got sent on assignment to write a piece for Travel Oregon about breweries using native yeasts. The article didn't allow me to say much about the practices of these breweries, so I'm expanding on what I learned here. 













One of the most interesting breweries in Oregon--and the US for that matter--is a little place nestled in a mist-veiled valley near Tillamook. Named De Garde after the French practice of aging beer ("garde" is something like "lager"), it might have been more appropriate to call it "Wild House" or something, for the signature feature of the brewery is that every beer begins life soaking in the ambient yeasts and bacteria in the brewery's cool ship. It is no longer wildly uncommon for breweries to make spontaneously-fermented beers or even to have an on-site coolship. But rare is the brewery that exclusively makes them. I visited last August and had a wonderful tour with Trevor Rodgers, one half of the dynamic duo who run things (along with his wife, Linsey), and learned quite a bit about their practices.

Brewery
Most of the excitement happens later in the process, but building a wort that can nurture wild yeast and bacteria is a critical first step. “Our brewhouse is very rudimentary, a dual-kettle system, indirect fire [system],” Trevor explained. “We’re looking for a very starch- and protein-rich wort for a lot of our beers. For the base for that particular beer, the lambic-inspired base, we want a lot of starch and a lot of protein coming.”

In Belgian lambic-making, brewers do this long, complicated process called a "turbid mash." The goal is to create a nutrient-poor wort that is rich in dextrins and starches. Lambics go through a strangely bipolar ferment. At first, brewers are trying to inhibit things ("things" begin the harsher spoilage bacteria that can ruin a wort) and encourage a slow but healthy initial ferment. But they also want to leave something for the Brettanomyces to chew on later in the process. So it's a starve-the-now-and-feed-them-later approach.













Trevor started experimenting with turbid mashes, but switched to a radical approach that left my jaw hanging open when he described it. He trotted by the process so quickly I had to back up a few sentences and ask him to repeat what he does now. Since it is so unusual, he asked that I not broadcast it to the world, but ask about it if you visit the brewery. Now that De Garde has had a chance to see what longer-aged beer does with the wort, Trevor's satisfied that it is a fine substitute for the traditional approach. (We don't want to get too deeply into the weeds, but that "traditional" approach originally emerged from the way local jurisdictions taxed breweries, so it's reasonable to think alternate methods might be fine for creating the right kinds of worts.)


Inoculation
Most places on the planet are not suited for year-round spontaneous fermentation. During the summer, the temperatures are too high and the wort spends too long in a microbe-friendly warmth. During the summer there are also more microbes about. The result is spoilage, and it was so common that Europeans didn't brew during the summer (and many local governments banned it). Tillamook, by contrast, is one of those places that never gets very warm, so De Garde is a 12-month brewery. “That’s why we pursued the Oregon Coast—as the likely place to have success, given that it is temperate year-round.” Indeed, I visited not long after the hottest day ever recorded in Tillamook, and it still got down to 52 (11 C) overnight. (They didn't brew that day.) But neither does it get icy in the winter; it's a perfect Goldilocks zone of just-right.

A lot of the romance of spontaneous fermentation is vested in the activity of the coolship, but we know more about wild yeasts now, and realize this is only one part of the process. Trevor emphasized that point to me:
“I think there’s a misconception that all the beer’s inoculation is coming from the air, from outside, whereas realistically, most of the inoculates are coming from the brewhouse environment itself. What we look for is a resupply of enteric bacteria from the outside environment because they don’t do as well in even a modestly clean brewhouse environment. They’re essential to get complexity of character. Those early off, you know phenols and characteristics that are undesirable are later broken down and reformulated into something that’s a lot more pleasant and complex. You can get sacch, brett, lacto, and pedio from the brewhouse environment, but you need refreshment regularly coming through.”












Aging
De Garde is located in a large industrial building, the majority of which is dedicated to barrel storage. It's so large, in fact, that De Garde can afford to keep the barrel stacks low for a more consistent temperature. Again, Tillamook's location is perfect for this: it is consistently 55-60 degrees (13-16C) in the warehouse, which requires no climate control (except the coastal breeze). As we stood in the barrel room, I tried to lure Trevor into talking about his approach and philosophy, which is so critical to making these beers. His answer surprised me.
“Our biggest challenge as a natural, wild brewer is to restrain acidity. It’s going to be there, and you need some for the complexity, but it needs to be in balance. It’s like the hops arms race—we are in that phase. The demand for sour beer makes people think sour is good. Like hops are good; bitterness is good. But that shouldn’t be the defining feature of a beer. It should be an element that is essential to produce complexity—not the element defining the beer.”
For me, this is actually the most important element of De Garde's house palate. When the first De Garde beers were released, they weren't restrained at all; some were viciously tart. But recently they have come into remarkable harmony. It's actually no surprise that it's taken the brewery a little time to dial these in--it's a bigger surprise that they managed to do it so fast.


Trevor continued:
“We’re not masters of anything. We make wort, we don’t make beer. That’s very different; we’ve relinquished control for the most part. The one thing we do control is what goes into the barrel, and what gets blended from the barrel. But even after that, because it’s naturally reconditioned in the keg and bottle, you have zero control. I didn’t have any gray hairs when I started,” he said with a laugh (I still didn't see too many). “The taste from that barrel, the complex Brettanomyces interaction, the gentle acidity, you can’t replicate that by adding ingredients into beer, by pitching five dozen different strains of Brettanomyces—it takes a natural interaction.”
De Garde makes  a number of different kind of beers, from their shorter-aged "Berliner weisses" (which are unlike others of their kind), saisons, aged beers and aged fruit beers. My favorites are the ones that have been aged longer and have more layered complexity. They share a similar configuration of flavors you find in Belgian lambics, but they would never be mistaken for them. I don't know what role the native yeasts and bacteria play in this, or whether it has to do with that strange mashing regime or the way they're aged or what, but they are singular. Perhaps one day we will speak of a "coastal" terroir.

Tillamook's about an hour and a half drive from Portland, which make for an ambitious beer outing. The drive is beautiful, though, and if you like complex, balanced, barrel-aged wild ales, it's well worth the time.

The Third Dimension: Wild

A little while back, we had a lively discussion about whether Americans should call their wild ales "Lambics."  The question was taken up on Twitter and Reddit as well, and one of the most pervasive critiques was summed up by commenter Jordan like this: "At least supply a catchy name for the new style if you're going to insist on the semantic distinction."  Fair enough.

Let's begin by agreeing that aside from these wildlings, beers can be divided pretty cleanly into the categories of ale and lager.  (There are outlying opinions, but let's dance past them for brevity.)  This taxonomical division rests on the behavior of the yeasts, so why not follow the logic and add a third category of wild ales*.  These are the beers acted upon by any rough interloper (brettanomcyes, lactobacillus, pediococcus, etc.) in any method of brewing.  The category would then include anything from Berliner weisse to lambic, Flanders tart ales to whatever it is Chad Yakobson is making. 

The thing is, there are a lot of ways to get to funky, and the extremely baroque procedures of lambic-makers are only one.  A possibly inexhaustive list includes:
  • Spontaneous fermentation.  Leaving aside things like turbid mashes and extra-long boils, what makes this the most extreme and rare form of wild ale is the method of fermentation: naked wort exposed to the elements.  The resulting bacteriological bacchanalia is wholly uncontrollable and few brewers actually rely on pure natural fermentation.  Allagash did the world an enormous favor by inventing a word for this process, and we should stick with it.  All lambics are spontaneous wild ales, but not all spontaneous wild ales are lambics. 
  • Spontaneous via media.  Cideries and wineries use this method all the time.  Yeast collects on the surface of fruit, and is adequate to ferment wine and cider all by itself.  I know of only one brewery that does it--Italy's LoverBeer, where brewer Valter Loverier uses local Barbera grapes to inoculate his wort.  It makes such spectacular beer, I wouldn't be surprised to see others follow along.
  • Solera.  In the production of balsamic vinegar and certain liquors like sherry, a solera consists of a series of wooden casks.   In beer production, each cask is its own solera.  New Belgium is the most famous solera brewery.  When it comes time to produce a beer like La Folie, the master blender will begin tasting lots from different vats and making a mother blend.  Afterward, the brewery tops each vat off with fresh beer and the process repeats.  Over time, each vat becomes a distinct ecosystem for populations of different microorganisms, and the beer each one produces is different from the next. 
  • Barrel inoculation.  Another way of working with native populations of yeast and bacteria is to nurture them in barrels and inoculate fresh wort by putting it in inside these funky casks.  Some breweries regard this as spontaneous, but it's a form of indirect pitching--especially in cases in which the brewery has seeded the barrel with a batch of brettanomyces-pitched beer.  
  • Pitched wild yeasts.  The easiest and most common way to introduce wild yeast and bacteria to fresh wort is in the form of laboratory-produced pure culture. At some point, people are going to debate whether these constitute "wild" strains, but so far, we haven't had to contend with that argument.  (Knock on wood.)
As you see, only one of these techniques uses spontaneous fermentation.  In no case should the word "lambic" be used to describe a beer made by any other technique--whether or not you think the place of origin matters.  It becomes very complex when you consider that there is a version of Berliner weisse that also uses purely spontaneous fermentation, but which begins with a lactic fermentation sparked by wild wheat-born lactobacillus. (Pedio, not lacto, is the main source of lactic acid in lambics.)  The process and final beer is quite a bit different from lambic--and there is only a couple fully wild Berliner weisses I know (Bear Republic Tartare and De Garde's Bu Weisse).  And anyway, Berliner weisse is a nice style we all understand.

So that's my modest proposal.  Place them all in the category of wild ales, as distinguished from ales and lagers, and pay special attention to those beers that use fully spontaneous methods of fermentation.  

Errata.
It's really easy to get in the weeds here.  Rodenbach, for example, calls its method "mixed fermentation," and uses a version of barrel inoculation of fresh beer.  Ah, but those barrels were originally inoculated by beer fermented spontaneously, a practice Rodenbach only discontinued in the 1970s.  So it's in a sub-category of probably one brewery.  But whatever else Rodenbach is, it's definitely wild.

Why Americans Don't Make "Lambics"

I sparked a mild fracas on Twitter* yesterday when I responded to a tweet with this:


Americans are the great appropriators, though, and people started making the point that many styles have origins in other places and we still use those style names when we make the beers in America:



It's true.  An even better case would be kolsch, which has a European PGI and which the Germans take very seriously.  Americans blithely brew kolsches without the slightest thought about how the style relates to place.  And because I'm an American, I'm generally sympathetic to this view.  There are two good reasons we shouldn't call anything outside Payottenland a lambic, though.

Working to keep lam
The first is pedantic.  Lambics aren't just a legally protected style (though they are that)--they're a product of place.  It's the oldest extant style on earth (or anyway the oldest that is essentially the same as it was in the 16th century), and one that is bound to the area around Brussels by the particular fauna yeasts [see comments below] that seed the cooling wort.  Moreover, it is a extremely specific product of craft.  In order to preserve that lineage of what a "lambic" is, lambic-makers all agree to produce their beer in specific ways to specific specifications: at least 30% unmalted wheat; spontaneously fermented; hops aged at least a year; in the case of gueuze, the beer must be refermented in the bottle; contain specific compounds like the presence of brettanomyces and absence of isoamyl acetate that affirm it was made properly; must be aged at least a year on wood (or in the case of gueuze, must include one-, two-, and three-year-old blends).

All these things define what a lambic is and should be.  Other breweries make spontaneously-fermented beer in Belgium, but unless they're in Payottenland and make it to these standards, they don't call their beer lambic.  They are making, both in the letter and spirit of the law, different beers.

The second reason is actually the one that convinces me, though.  It's not pedantic or supercilious, as the first one is usually thought to be.  Lambic is certainly one of the hardest beers to make in the world (and for my money the very hardest).  It has nearly disappeared at least once, and despite the wild ale revolution in the US and Italy, isn't an especially robust segment of the Belgian market.  When I visited Cantillon, I encountered owner fourth-generation brewer Jean Van Roy up to his elbows in a whirlpool, trying to extract hops from wort as it went to the kettle.  He had already been working for six hours and his day was nowhere near done.  The Van Roys, along with a handful of other families in Belgium, have continued to make this beer the old way, no matter how much of a bitch it is, and seemingly, no matter how small the market got.

Amazingly, when they finally started to find an export market in the US, folks like the Van Roys were happy to receive US brewers and tell them their secrets.  Brewing days are open at Cantillon.  You can ask Jean any question you like; you can film every minute of his brew and write extensive notes.  You can take this information home and brew your own beer to his exact specifications.  And you can do this all with his explicit blessing.

All he asks is that you shouldn't call it lambic.  In the long, lean decades of the 1950s, 60s, 70s, and 80s, his family toiled to keep the tradition of lambic-making alive.  Their brewery contains a small museum that tells the story of this lineage and illustrates how the brewery fits into it.  It is the tradition of lambic-making, and now that the style is enjoying a bit of a renaissance, he'd like you to remember this long tradition and what it means and has meant to his family (and the families of the other lambic-makers).  When you think of lambic, think of the beers these brewers have kept alive in this little corner of the world for so long.  It's not a huge request.

In America we make wild ales or spontaneous ales.  We don't make lambic.


Update.  Since this post has been discussed broadly on Twitter, Facebook, Reddit, and at least one other blog, I'd like to add two more points.   I made the first one, but extremely obliquely.  It's that wild ales are different depending on where they're brewed.  They're spontaneously fermented: that is, wild yeasts floating in the air seed the wort.  You can do spontaneous fermentation anywhere, but you'll get different yeasts.  In lambic land you get brettanomyces bruxellensis--named for the city of origin.  When Rob Tod started making spontaneously fermented beer at Allagash, he had his brett culture looked at and found it was unlike anything anyone had seen before.  (Brettanomyces portlandensis?)  The wild ales Ron Jeffries makes in Michigan are different.  Lambics are beers principally defined by the yeasts, and it is therefore literally impossible to make spontaneously-fermented beer taste the same if you make it in a different place.  This is (in addition to the stuff I mentioned above) why it's different from a lot of the protected European names, which actually can be pretty easily replicated elsewhere.  Lambics are wild ales from Payottenland.

The second point has to do with why I care about this.  Apparently I've been a little vehement on the issue.  (I have!)  It's because the style very nearly died out in the 1960s and 70s. When I visited Frank Boon, he explained the sad fate of many of the beers during that time:  "Forty years ago, this was a time when breweries were closing and all the local styles were disappearing. Everywhere in Belgium. Louvain white disappeared, Peeterman disappeared, [ascot beers] disappeared. In the 1950s and 1960s. If gueuze had disappeared in the 1960s, nobody would ever have imagined to make such a beer."  Other Belgian breweries have very often stolen names.  They used "Trappist" to describe beer that had nothing to do with monks.  They took kriek and gueuze and faro and used it on beers that had nothing to do with lambic.  In a last-ditch effort to save the style, lambic makers and blenders banded together to get a PGI to protect some of their products.  If they hadn't, I have no doubt but that there would be no lambic today.  Kriek is a cautionary tale.  It was appropriated by other breweries for beers that aren't made traditionally, and now you can find a debased cough syrup product called "kriek" everywhere.  That would have been the way of lambic had they not taken action to protect it.

Obviously, these are all businesses and they all want to protect and promote their products.  But in this case, the word has real power.  If we allow "lambic" to mean "any sour beer," then what happens to the beers that take 12 hours to brew and three years to age?  If I'm vehement, it's because I'm scared to death that my favorite styles of beer will vanish.

Again, Opinions Differ

From the famed scientist Louis Figuier, from his famous 1860 Les merveilles de l'industrie, ou Description des Principales Industries Modernes (The marvels of industry, or Description of Key Modern Industries). Not so big on the lambics:
"Belgian beers [he was referring to "lambicks" here] do not have yeast pitched and are fermented spontaneously by the grace of God. Being left to themselves, a final, slow fermentation continues, not at a low temperature, as with German beers, but at ordinary temperatures, and are products of chance and the whim. If a few Belgian beers deserve their reputation, most are sour, the wort quickly turns from alcoholic fermentation to the acid fermentation, so that, when consumed, they have already lost much of their alcohol and changed into acetic and lactic acids. Let us therefore pray that the German method, that is to say bottom-fermentation, penetrates the Belgian brewery and reform its old processes."
Three things. First, this is a Google Translation, so the hinky language should not necessarily be blamed on Figuier. Second, Figuier had a strange sense of what happened to alcohol in wild fermentation. Third, his prayers were eventually answered, but fortunately, not completely. Belgium is awash in lagers, but a few breweries still depend on whim and chance.

It does raise one question: how did lambic survive? In 1860, Europe had dozens of styles destined for the memory hole. If you were to line them up and rank them based on likelihood of survival, lambic would surely have been very near the bottom. Lagers hadn't yet claimed the planet, but as Figuier's opinion demonstrates, lambic even then looked like a dinosaur. It has only been in the last three decades that lambic producers have managed to control the process well enough to put out fairly consistent examples. When I spoke to Frank Boon, he mentioned that the lambics of the 1970s were totally inconsistent.
“But I didn’t realize at the first time that there was a lot of flaws in his beers. Because he only gave us the best bottles. It’s like the old professor said, ‘these old lambic brewers, they sell gueuze like they sell pigs: everybody wants the best meat, but you have to sell the whole pig.’ When customers complained that there was no head on the beer, they said it was proof that there was no additives in it. If it was cloudy, they said see, it’s the proof that it’s unfiltered. If it was foamy, they waited until the winter to sell the beer.”
Yet somehow they remained commercially viable for 15 decades after Figuier wrote his condemnation. Belgium is not like other places.

The Valley of the Lambics

Not all beers are made alike. It may be uncouth to acknowledge this fact, but some beers are so time-consuming and difficult to make that they're in a separate category--"Beer Plus," say. On the one hand, a typical American or English ale might spend as little as an hour steeping in hot water, another hour in the kettle (with some lautering time in between), and then a week or two in primary fermentation and conditioning before being packaged and sent off to market. Some of these beers are triumphs of accomplishment. But a gueuze, which I would argue is one of the signature achievements in brewing, requires exacting circumstances, years of aging, and the totally separate skill of blending. It's unfair to compare a gueuze to a mild ale or even an American IPA--to both beers. Visiting lambic land confirmed in my mind that no beer is harder to make, nor any better when made properly.

I scheduled my arrival in Belgium to coincide with a relatively rare brew day at Cantillon. Lambics can only be brewed in the winter when the air is cool enough to chill wort overnight. Because lambics spend years in wooden casks, lambic brewers are confined to annual outputs equal to the cask space their breweries allow; Cantillon, a small brewery in a small building in downtown Brussels, has a strictly limited capacity. So brewer Jean Van Roy brews only enough beer to fill his available cask space. (Important tip: if you want to see Van Roy in action, visit between November and March and watch the Cantillon Facebook page about brewing dates.)

Lambic brewing is by design an ancient practice, but even among lambic breweries, Cantillon is the most insensitive to time. The equipment, the brewery, the methods--everything could have come straight from the 19th century. (With one caveat: Germans stole all Belgium's coppers in World War I, so the oldest coppers anywhere only dates to about 1920.) Cantillon has a museum at the brewery as well, but you'll find if you visit that this is a bit redundant. Cantillon is a museum.

Unlike that easy pale ale that goes from whole malt to fermenter in a few hours, a lambic is an all-day grind. The turbid mash, designed to create a wort that can stand up to years of munching by wild yeasts and bacteria, takes hours. Cantillon's equipment is steampunk old, and very hands on. When I arrived, Van Roy was pumping the finished boil through a thing that looked a bit like a hop back, except that it's purpose was to remove hops, not add them. Hops are used in lambics as an anti-microbial, to keep the wilder elements of the wild yeasts from getting out of hand; breweries age them so they're leached of all alpha acids and add no bitterness or flavor. (Except in a beer like Iris, where Van Roy jumps off the road of strict tradition.)

The wort becomes a template for feral yeasts, invited to join the party during the next phase of the process, when it goes up to a vessel called a koelschip (cool ship) that looks like an enormous cake pan. Van Roy has a disarmingly democratic approach to visitors: me brasserie su brasserie. He told me to just go wander around if I wanted to see the rest of the place (he was elbow-deep in the hop-catcher). The koelschip is on a loft above the brewery's top floor, where open windows let in the Brussels air. On a chilly day, the steaming wort creates clouds of ethereal mist that waft through the rafters, and I spent probably fifteen minutes communing with this scene. For an American lambic fanatic, this was ground zero for one of the most remarkable events in brewing.

In the romantic story of lambic brewing, you always hear about the pastoral Zenne Valley, laden with fruit trees and farmers smilingly working the fields. My mind conjured a kind of rural preserve where the wild yeasts were pristine and untroubled by modern life. Wrong. Cantillon is in the city of Brussels (it's called a "suburb," though to American eyes this is a bizarre characterization--the city sprawls unending for miles and miles, and Cantillon is in the middle of a gritty urban tableau.) The wild yeasts have definitely been slumming with some street-wise elements, from which I conclude that it's not mandatory to have untrammeled rural wonderland to make lambic--potentially good news for Americans willing to risk experimenting with spontaneous fermentation.

The most important part of the process happens in the wooden barrels, which themselves have their own ecosystems. What develops in the casks is straight lambic, some of which breweries may sell without blending. You get interesting but variable character from straight lambic. The real triumph of this style of brewing comes when lambic-makers blend the barrels and then add younger, fresher year-old lambic to add liveliness and effervescence to the sharp, dry, and completely still lambics that result after three years.

I followed my visit to Cantillon with a trip to Brouwerij Boon the next day. It was a fascinating contrast of styles. Frank Boon is emphatically not a museum brewer; in fact, he's one of the most microbiologically sophisticated brewers I encountered in Europe. He currently has a traditional old brewery, but Boon is in the process of upgrading everything--well, almost everything. He will install the world's first modern lambic brewhouse, purpose-built to accommodate the rigors of turbid mashing, but designed to create absolutely consistent worts batch after batch. The traditional part of the process--koelschip, wood aging, and blending--will continue as it has for centuries.

The Boon brewery is located in Lembeek, the historic capital of lambic brewing--the famous Zenne is just a stone's throw away. (It's tiny.) This is a much more rural location than Cantillon's, but it's still just 13 miles from Brussels' Grand Place--in what Americans would actually call a suburb. Boon told me that valleys were important for lambic brewers--and dangerous to regular breweries, which like to locate themselves on high ground. Valleys create pools of still air, and microfauna collect there. River valleys are even better, because the fog and humidity help keep the wild buggies from drifting away. Even though it's just around the corner from Cantillon, the wild yeasts are definitely different near Boon--as anyone who's tasted beer from the two can readily attest.

Another area where Boon and Cantillon differ is their casks. Cantillon uses wine barrels, but Boon uses vats. They aren't as big as Rodenbach's but they're in the ballpark--and 20-40 times bigger than wine barrels. This has a substantial effect on the beer. The volume of beer exposed to wood is greater in a smaller barrel, which affects the density of resident microfauna and amount of air that permeates the staves. I mentioned to Frank that I've seen Raj Apte's analysis of which yeasts become active in the life-cycle of lambic and asked if his followed the same pattern. Boon has been working with a university microbiologist to learn more about his yeasts--likely the most far-reaching studies into the biology of lambic ever done. He gave me a Cheshire Cat grin and said that Apte's charts don't apply to his yeasts--but he wasn't prepared to divulge how Boon lambic differs.

As with Rodenbach, my tour of Boon was spent disproportionately in the impressive cellar. We sampled lambic at different ages to see what character it would give to a gueuze. On their own, they were all less complex than the finished gueuze--one two-year-old batch was pretty tart and sharp, one was more fruity. The year-old lambic was sweet and uncomplicated.

Just before I left Cantillon, Jean pulled out a bottle of 2006 Gueuze, which was one of the highlights of the trip. It was practically glowing with sharp lemon notes. Boon makes a gueuze called Mariage Parfait, which has always been among my very favorite beers in the world--it's got layers and layers of fruit and sour flavors, a tiny bit of saltiness, and a towering effervescence. Drie Fonteinen, which is in between breweries, uses Boon's lambic in its blends, and that brine really pops. It's actively salty, but also has a kind of umami note.

Lambics, and especially gueuzes, live in that strata of artistic accomplishment that includes stinky cheeses, opera, and abstract art. It's very difficult to come to a gueuze cold and appreciate what's going on with it. If I had three beer wishes, I'd ask that people try several different gueuzes in at least ten sessions--different brands and ages. Unlike a lot of American sour beers, gueuzes don't have super challenging flavors--there's no band-aid, solvent, or burning tire. Because of the blend of young and old beer, they're not intensely dry nor sour, and the effervescence nudges them toward sparkling wine. Once you get past the shock of the experience, you begin to understand the flavors and how they work together. Moreover, sampling a bottle from different breweries makes it instantly clear what role the wild yeasts play. Gueuzes are a bit like dog breeds--they are distinctive and unique, and people have their preferences. I'm a Boon man, but I know people so devoted to Cantillon, Drie Fonteinen, or Girardin that they consider the preference for others a minor blasphemy. That kind of devotion is a testament to just how profound these beers can be.

American Lambics: Allagash Spontaneous and Jolly Pumpkin Lambicus Dexterius

The history of modern brewing can be described as the triumph of sanitation--keeping wild yeasts out of beer. The central achievements of the past 150 years do not involve flavor innovation but the mastery, through refrigeration, pasteurization, and the application of industrial chemicals, of yeast. The one way to ruin a good brewery was through lax standards and the introduction of infectious, unwanted yeasts. This is why the experiments at Allagash and Jolly Pumpkin are so remarkable. Not only are they not trying to keep wild yeasts out, they're actively encouraging them to wander in.

Last Tuesday, I had the opportunity to sample the lambic experiments* of these two breweries, and it was like witnessing a birth. This process is ancient, obscure, and onerous. To see it transplanted and revived in the US borders on miraculous.

Spontaneous fermentation is an ancient practice--yeast wasn't even discovered until the mid-1800s. By then breweries had more or less figured out that leaving inoculation to chance was unwise; they re-pitched by dumping dregs of one batch into the next. They effectively domesticated yeast without knowing it existed. Before that, they brewed a batch of wort and let it sit out. Some natural process unknown to the brewers--God perhaps, or magic--caused the liquid to ferment.

A few breweries still make beer this way, and until five years ago, they were all located in Belgium. These breweries have special facilities where they allow wort to cool, taking in the microflora from the countryside. The vessel in which the wort rests is called a "koelschip," and once the wort has spent a night there, it absorbs the final ingredients to turn it to beer. Brewers return the liquid to casks, where it sits for months or years, waiting while throngs of micro-organisms slowly turn the sugars into alcohol, acids, and other compounds (brief primer here) and create some of the most interesting beer in the world. Only a handful of traditional lambic breweries remain, and their annual production is like a rounding error for a larger brewery.

And yet Allagash and Jolly Pumpkin have taken up the old ways. Both have hewn to tradition, too: they use the appropriate amount of wheat in the grist (about a third), employ a turbid mash, use aged hops (to impart bacteria-inhibiting compounds but no bitterness), and both used a coolship. I visited Allagash in November 2008 and wrote about the brewing process here. Jolly Pumpkin's Ron Jeffries describes his process here. Given these similarities, the lambics we tried on Tuesday, including two Belgian examples, were differentiated principally by the wild, native buggies of the regions they were fermented: Maine, Michigan, and Belgium. And different they were!

The Allagash lambics are not commercially available. I begged and wheedled and managed to get brewer Jason Perkins to send me some samples. They almost certainly will be at some point--everyone was so impressed with their character and accomplishment I can't believe they won't get released. In some ways, lambics are more like wines than beer; they depend so much on factors beyond the brewer's control that vintages vary widely depending on when they were brewed. Some measure of consistency comes from blending, but what you mainly get from a lambic producer is a house character. Boon's is more lactic, Cantillon's drier. I suspect the general character we found in the Allagash beers will carry through on future vintages. The Jolly Pumpkin is commercially available, though you probably have to go to Ann Arbor to get a bottle.

The tasting notes are arranged in the order we tasted them. The tasting panel** consisted of Derek from Beer Around Town, his friend Josh Grgas, Sally, and Upright's Alex Ganum. My sense is that we generally shared similar experiences, though we related to the beers a little differently. I was very happy to have Alex on board--as a proxy brewer for Ron, Rob, or Jason, we couldn't have done a lot better. Geoff Phillips was kind enough to lend us a table at Bailey's to host the tasting, too. Here goes.

Jolly Pumpkin Lambicus Dexterius
A gueuze of lambics aged 4, 3 1/2 and 2 1/2 years. This was, by an order of magnitude, the most funky beer at the table. Bottled still, it poured out like apple juice. The nose was sharp and solventlike; imagine a bottle of nail polish. Sally, who is sensitive to oak, picked this up right away. Very dry, with a grape-skin pucker. As the beer sloshes around the mouth, it seems funky but not deadly; swallowing it, though, is like taking a hit of acetic acid from a chem lab beaker. Easily the most acidic beer I've ever tasted. We were all left a little shell-shocked afterward. My comment is that I hope the intensity can be adjusted through blending. Even for lambic freaks, this is likely a bridge too far. Sour-o-meter reading: 6.

Allagash Coolship Resurgam
A gueuze of 2-year, 18-month, and six-month lambic. A livelier beer, but not exactly effervescent. Right after we opened the bottle, I was picking up a sharp note in the sour nose that I think might have been butyric acid. With a moment of breathing, this vanished, leaving a peppery, lemony scent. It has a soft, dry palate that suggested wheat. I found it far less acidic--with the lemon, it was more on the tart side. We were all picking up a bit of hoppy bitterness on the palate, too. I know Allagash is in the process of aging their hops, but possibly they haven't been aged enough. (Though to tell you the truth, the mild hop bitterness did not clash with the beer--it was just less traditional.) My favorite gueuze is Frank Boon's, which is drier, sharper, and extremely effervescent. Allagash's is not yet as complex as that, but it is remarkable for a first draft, and makes me think it may one day ascend to that level. Given that it's a beer made with the wildest, untamed new world yeasts, I expected something a little more nasty--like the Jolly Pumpkin. Yet it was almost gentle. Sour-o-meter reading: 4.

Oud Beersel Gueuze
Typical for style, the Oud Beersel boasted champagne-like effervescence. I noticed a distinctive inner-tube aroma that could also be called skunk. A bit musty, cellarlike. The flavor, though, is much more approachable than either American example. It was the sweetest of the non-fruit lambics, but Alex was certain these were esters. We had a mini debate about whether it really was sweet or just tasted fruity. Alex brews with one of the driest yeasts available, so he should know; still, my tongue tells me what it tells me: sweet. The finish is light and refreshing. An uncomplicated gueuze--if such a thing exists. Sour-o-meter reading: 3.

Allagash Red
I assume it's the same recipe as the cherry blend (see below), but I haven't found confirmation; though the blend was definitely aged on raspberries for three months. Even in the bottle, you could see the vivid red of this beer. It was fairly effervescent, and easily the prettiest beer of the afternoon. Reminiscent of Cascade's Apricot, the aroma was saturated with fresh raspberries. Interestingly, their flavor was quite subtle. Instead, it was a drier, more tart and more refreshing version of their regular gueuze. The body was quite thin--too thin for some of the tasters. I sensed some disappointment around the table that, after the splash of color and rich aroma, the beer lacked the intense flavor of raspberries. I thought it was quite stylish, though--so flashy to see and smell, but then coy and reserved on the tongue. It was my favorite of the night. Until we cracked the cherry lambic.... Sour-o-meter reading: 4.

Allagash Cerise
A blend of 90% 2-year lambic with 10% six-month, then aged for three months with local Maine Montmorency tart cherries. Brewer Jason Perkins calls it "albino kriek," and it's easy to see why: the cherries give the beer almost no color. The nose carries a bit more cherry, but not a great deal. But then, in a mirror image of the Red, the flavor explodes with fruit. It pops with cherry--deep and peppery. The sour is softened a bit by the spiciness and pit bitterness of the fruit, but the cherry is softened by the lambic--its bright, fresh flavors smoothed and darkened. (There's a reason cherries are the go-to fruit with sour ales.) The body was a bit fuller than either of the other two Allagash beers. The table was unanimous in declaring this the afternoon's best beer. Sour-o-meter reading: 3.5.

Girardin Gueuze
We finished up the tasting with a visit back to Belgium. Like the Oud Beersel, Girardin's Gueuze was very lively, sending the cork up toward the ceiling. I was pleased to find the inner tube aroma again--an expression of Belgium's unique character. It was more lactic and more peppery than Oud Beersel, akin to a Berlinner Weisse in its sharpness and thin body. Not so much funky sourness, just a crisp, sharp, citric sourness. Sour-o-meter reading: 4.

It was a truly singular experience. I feel most indebted to Derek for sharing his Jolly Pumpkin, to Josh for sharing his Girardin, and to the folks at Allagash for sending me three precious bottles of their lambics.

*The word "lambic" is somewhat fraught. The most exclusive definition limits its application, like a wine appellation, to the Zenne Valley in Belgium. I've also heard people call beers "lambics" if they use wild yeasts--even ones pitched from a Wyeast starter. In my mind, any brewery that is willing to subject a turbid-mashed wort to a night's fresh air and adds no other yeasts has brewed a lambic, full stop. I am prepared to risk Belgian terrorists who dispute this use.

**The tasting panel was supposed to be bigger and include more bloggers. We had several cancellations, and by the time of the tasting, we hadn't had enough time to get the word out to other bloggers. I regret that I wasn't able to share it with more of you.

Easy Lambic

Yesterday afternoon, I transferred a batch of lambic that had been sitting on peaches for about a month. I know braver brewers go longer with their fruit, but I got skittish--peaches just sitting there at room temperature all that time. (Finding: when I dumped the spent peaches in the compost, they were perfectly preserved and not remotely close to ruining the beer. Should have kept my powder dry.) As usual, I had a sample during transfer and: wow! This should be an amazing beer.

As I have confessed many times, I'm a poor brewer. By the standards of the time when I started (1993), I was pretty good. But, when I try beer brewed by folks like Gansberg and Ganum, Harris and Swihart (just to name a few)--well, what I do shouldn't properly be mentioned in the same breath. Except--and let this be a lesson to everyone who loves sour beer--when I brew with Wyeast 3278.

A traditional lambic is a hairy beast to brew, even leaving aside the spontaneous fermentation. There's this nightmare known as a turbid mash, which I've never even considered. But a psuedo-lambic, fermented with this strain, is super easy. Just brew it like you would any beer, with a ratio of about 60-40 barley-wheat malt. If you have foresight or plan to be brewing a lot of years, buy some low-alpha hops (Saaz, Hallertauer, etc.) and throw 'em in a paper sack and let them sit. Otherwise, just use fresh ones in small quantities. (You can try to subject them to low heat to speed-age them, but it's unnecessary.) Then pitch with the Wyeast Lambic blend, and let the little beasties do the real work.

Lambics are all about the yeast, and this is an amazingly well-designed blend. Like a good sour ale, it produces beer that evolves. In the last lambic I brewed, I added some apples from my tree out front. I didn't use enough though, and the effect was exceedingly subtle to begin with. A bit in the nose. But as the brettanomyces continued to work and stripped away the last of the malt sugars, the evanescence of the apples emerged. Still very mild, but now clearly evident. Straight lambics evolve, too, and become these fantastically layered, austere beers after a couple years.

Fanatics will observe that these are neither real lambics nor as singular and intense as versions from the traditional breweries. But they're definitely in the ballpark. And since I usually can't even see the ballpark from where I man the kettle, this is enormously satisfying. If you like to brew, you like lambics, and you have some time, give it a shot. Results guaranteed ... eventually.

Must Have Been Fun

Owner Rob Tod and brewer Jason Perkins are traveling in Belgium, and they stopped in at Cantillon, where the two breweries shared each other's beer. Each other's spontaneously fermented beer. Allagash, for those who missed it, is leading the charge on spontaneous fermentation in the US. They consulted with Cantillon and built a "coolship"--or large, flat vat used to inoculate fresh wort with wild yeast. (I wrote a longer piece about this when I visited in 2008.) Must have been an enormous pleasure to share beer there in the cradle of lambics.

Allagash Lambic Debuts

Ah, the moment we've all been waiting for--the debut of Allagash's spontaneously-fermented beer. I wrote about this extensively when I visited the brewery a year ago. Via Beernews, here's the story:
Flash forward two years later to present day and the brewery has debuted the very first batch. Unfortunately for most BN readers, it took place in Belgium at The Day of the Lambic, a festival featuring more than fifteen unblended Lambics from nine breweries....

The City Paper interview with Tod has some other interesting tidbits: there have been eight batches total, each with what appears to be a few to several barrels a batch). The brewery is experimenting with a lot of different fruits like cherries, raspberries, and Maine blueberries.
I'll appeal to the brewery to see if I can somehow get a sample. (Without, you know, buying a plane ticket to Maine. Though that's not out of the question.)

What Sours a Beer?

In yesterday's post about Devil's Kriek, Samurai Artist sparked a conversation about the souring properties of brettanomyces. Since sour beers are becoming more common, it's a timely discussion. Sourness may be tart and clean as in a Berliner Weisse, dry and austere as in some lambics, our face-puckeringly intense, as in some Flemish reds. These different qualities come from different microorganisms, and it's worth spending a post mentioning a few of the biggies.

My source material here is Jeff Sparrow's Wild Brews, which I recommend highly for anyone interested in a deep understanding of sour beers. Let's start with a pithy opening from the start of his fourth chapter, "Beer-Souring Microorganisms." Here, he describes the actors that create the funk:
"Four dominant types of microorganisms commonly ferment and acidify wild beers: brettanomyces, lactobacillus, pediococcus, and saccharomyces. Sever other important players also merit a mention, including acetobacter, enterobacter, and various oxidative yeasts."
Now, in this next pithy passage, he describes the particular nature of the funk those actors produce:
"The acids most important to wild beers include lactic and acetic acid. Acetic acid, present in copious amounts in vinegar, is sharp, pungent, and greatly increases the perception of sourness. Lactic acid, found in spoiled milk, is less objectionable and contributes a 'tangy' character, sometime perceived as 'sweet' by brewers in contrast to other acids."
(There are actually a host of other acids that contribute flavor like caproic acid, which Sparrow says gives a "goaty," "sweaty," or "zoolike" character. But you can read his book if you want the full monty.)

Brettanomyces
This wild yeast inspires the most awe and fear among brewers. It will eat anything, including dextrins and sugars that other yeasts find unpalatable, achieving nearly 100% attenuation. (Brewers joke that it will start eating the glass in a bottle if you leave it long enough.) Attenuation is the percentage of available sugars a yeast will eat. Wyeast's Northwest ale yeast, a non-brettanomyces yeast, attenuates at about 70%, for example. Brett will produce both acetic and lactic acids, but the former only under certain circumstances. There are at least five species of brettanomyces and many strains within each. The most common is brettanomyces bruxellensis, named for a strain from Brussels.

Lactobacillus
Lactobacillus is a type of wild yeast bacteria that gives Flanders beers (red and brown) their character, as it does to some German ales like Gose and Berliner Weisse. It is not a major player in lambics, however--the lactic there comes from pediococcus (see below). As the name suggests, lactobacillus produces lactic acid. Lactobacillus is far more finicky than brettanomyces, preferring warm temperatures, a low-oxygen environment, and low levels of hop acids.

Pediococcus
As alluded to above, pediococcus is the beastie that gives lambics their lactic, not lactobacillus. This is mainly a function of the life cycle of a lambic. Pediococcus ferments in beer with little or no oxygen; likewise, it gives off no carbon dioxide. In a lambic, the pediococcus kicks in after 3-4 months when, fascinatingly, the wort is exceptionally sour as a result of early enterobacter production. The pediococcus begins when the lambic warms up, creating "long strands of slime" on top of the wort. You can drink the beer at this stage, but it's oily and known as the "sick" stage. But from the sickness comes the lactic, and eventually, the slime is reabsorbed as the brettanomyces begin gobbling up everything that's left.

The upshot? "Sour" isn't a fixed flavor. Different beers have different compounds and acids that contribute characteristics that define style. Brewers have very different attitudes to the kinds of sour beers produce. When I was at Allagash last year, Jason Perkins and Rob Tod described their efforts to cultivate native brettanomyces. On the other hand, Ron Gansberg doesn't want brett in his brewery; he's a lactobacillus man. Matt Swihart is a brett man, but is he only a brett man, or will future batches exhibit the character of other funky bacteria? I guess we'll have to wait and see.

Allagash Lambic

Doing a bit of research on the beers of the OBF, I came across an absolutely astounding story. Portland, Maine's Allagash, one of the first nouveau-Belgian breweries in America, has begun to make traditional lambics. As in, no yeast addition, waiting for funky nature to have her way with cooling wort.
After boiling, rather than cooling the beer in a sterile environment and adding a brewer’s yeast culture, the hot wort is pumped to a cool ship in a special room designed specifically to make these beers. The cool ship is a commonly used tool in Belgium, but is rarely seen beyond Belgium’s borders, if at all. It is a large, open tray that is 12 feet long, 8 feet wide and 1 foot deep. Once in the cool ship the hot wort spends the night cooling from near boiling temperatures to about 60 degrees Fahrenheit. To facilitate the cooling process, windows in the cool ship room are left open overnight. The cool Maine air, containing natural bacteria and wild yeast, drifts in and cools the wort. As soon as the wort is cool enough, the natural airborne yeasts and bacteria are able to survive in what will eventually be the spontaneously fermented beer (it is these natural yeasts and bacteria which will ferment the beer, rather than a yeast added by the brewer). Next, the wort is pumped back into a brewery tank, where it will spend one further day before it is pumped into special French oak barrels. Within one to three weeks, spontaneous fermentation begins in the oak and will continue for over one year. After the yearlong fermentation this traditional beer will age in French oak for at least one more year, sometimes with the addition of fruits, before it is finally bottled.
I've been waiting fifteen years to see if a brewery would actually invest the money, time, and equipment to this radical experiment. I bow in obeisance to Allagash's courage. It's absolutely amazing and cool. As a super bonus treat, there's video:

Lindemans Peche

Last night, as I stood in front of the Fred Meyer beer cooler, I submitted to a foolish urge: reacting to the unseasonably warm weather, I bought a Lindemans Peche. I love lambics, perhaps more than any style, but I am a cheapskate. The Buddhists say that we are governed by twin urges of craving and desire, and this decision was wrought with equal measures of each.

I know Lindemans to be a treacly imitation of the wonderful lambics I love, but--well, it was only five bucks. The Saison Dupont, one of my top five faves in the world, was twice that. I counsidered Maudite, at $8, but ... eight percent's a lotta beer. So I palmed the peche ("peach") and decided to give it a whirl. It's been so long that I thought maybe I misrembered just how treacly Lindemans is.

I did not.

What's a fruit lambic supposed to taste like? Let's turn to Jackson:
[T]hese are beers, produced from grain, with fruit added as a further fermentable material or flavoring. The best of Belgium's artisan-made, lambic-based whole-fruit ... beers have a great complexity and delicacy, and are dry. They are the beer world's elegant response to pink champagne, and make a pretty, unusual and appetizing drink with which to welcome guests at a summer party. [itals mine]
Fruit lambics may emphasize either the dry, sherry-like aspect or the sour wild-yeast aspect, but they should never be sweet. In a good lambic, the fruit's sugars will be wholly consumed, leaving the nose and color and the flavor of the fruit, like the essence you find in unsweetened fruit seltzers. I have had lambics that smelled intensely of freshly-picked fruit but had almost no flavor. In others, the fruit comes through on the palate, but runs up against the sour before it can ever take you to sweetness. Many are dry and perfect refreshers.

Lindemans is peach soda. It is syrupy sweet, a single-noted beer that is scandalously absent of sour. There is a cola in India named Thums Up (in India, "th" is aspirated, so you say 'Tums up"), which ranks as the sweetest beverage ever made; you expect the sugar to recrystalize on your tongue as you drink it. Lindemans is sweet in a different way, like the syrup that comes in canned fruit, but no more pleasant.

In the end, I learned a valuable lesson: spend not your five bones on a crappy beer lest ye waste it; instead, double down and get the transcendent Dupont. When will I learn?
